Poplar Grove Farm Baked Oatmeal

3 Cups Large Flake Oatmeal
1½ Cup Milk

¾ Cup Ground Flax
¾ Cup Sunflower Seed
½ Teaspoon Baking Powder
½ Teaspoon Cinnamon
¼ Teaspoon Salt (optional)

2 Eggs
½ Cup Canola Oil
½ Cup Honey or less

Pour milk over oatmeal in a large bowl and stir briefly.

Combine flax, sunflower seeds, baking powder, cinnamon and salt.

Beat eggs with a fork. Add oil. Add honey. Beat briefly but vigorously after each addition.

Add flax/sunflower seed mixture and liquids to the soaked oatmeal. Stir until combined and spread in a 9x9 greased pan. Bake at 350 degrees for 25 – 35 minutes until top begins to turn golden brown. Serve warm or cold. Can also be split and toasted for a quick breakfast.

Top with plain yogurt and Poplar Grove Farm Raspberry Spread for a taste sensation – and very healthy also!
